Sticky toffee pudding and ice cream | Blogtober Day 9

Jessie had a go at making Nigella’s sticky toffee pudding this evening – it was surprisingly easy!

You only need 5 ingredients (actually 6, but I didn’t want to include the dates) and some ice cream to serve it with.

1. Firstly you need to set your oven to gas mark 5 (190 degrees) and grease a pudding dish with butter. Jessie did this by melting a little bit of butter in the microwave and brushing this all over the dish with a pastry brush. Excellently demonstrated below 👇🏻

2. Next I weighed out 100g of dark brown sugar and 175g of self raising flour which Jessie mixed together for me with a wooden spoon (only spilling a little bit 🙄).

3. After that, I measured out 125ml of whole milk into a jug and added 1 large egg. My little helper enthusiastically mixed these together with a fork. I also melted 50g of butter in the microwave and added this to the milky mixture.

4. Next job was to pour this into the flour and sugar mixture from earlier, mixing with a wooden spoon. Jessie’s little arms weren’t quite strong enough for this job, so I helped out a little 😉 We then poured this mixture into our greased dish.

5. This was Jessie’s favourite part of the recipe. We sprinkled 200g of sugar over the pudding mixture (which Jessie tasted, just to make sure it was ok)

6. I chopped up 25g of butter which we dotted over the sugar, like so…

7. Now this is the strange part… you pour 500ml of boiling water on top of your masterpiece. So you have a layer of sugary water on top of your pudding mixture which looks like this…

When you put it in the oven for 45 minutes, the boiling water magically creates a delicious toffee sauce underneath your pudding! I’ll be honest, I know it’s not the prettiest looking thing, but trust me when I say it is truly scrumptious!!

  1. Ok. I might have to bookmark this! It sounds ace… and kinda easy! I like that it sounds great with ice-cream in the summer… but also with custard for the winter!
